Custard Cake for Christmas
Its christmas again, a perfect season for us to make something special for our family...I do love to cook for my family during this season and other occasions too. I just wanna share my recipe... My custard cake recipe. Hope you like it too.
Custard Cake
Dry Ingredients:
250 grms. Cake flour
170 g. sugar
14.5 g. baking powder
Liquid Ingredients
5 pcs. Large eggyolks
110 g. oil
170 g. water
5 g. vanilla flavor (or any flavor)
For Meringue:
10 pcs. Large eggwhites
3 g. cream of tartar
55.5 g. sugar
Toppings: Custard
5 pcs. Large eggyolk
1 big can evaporated milk
½ cup sugar
1 tsp. vanilla
½ cup sugar for caramelization
Procedure:
Topping:
1. Prepare a 9x3 inch baking pan or a perfect square baking pan
2. Caramelize 1/2c. sugar in a prepared cake pan. Cover the pan with
caramelized sugar. Let it cool
3. Mix all remaining ingredients of custard filling in a bowl. Blend well. Pour
in the caramelized pan. Set aside
4. Prepare a large enough pan that the caramelized pan will fit on it for
steaming. Pour in water. Put it into a 350 F oven.
For cake:
1. Mix all the dry ingredients. Set aside.
2. Mix all liquid ings. Blend well.
3. Mix the dry and liquid ingredients. Don’t over mix or your cake will be
hard. Mix it for approximately 1 min. Strain it to get the lumps. Set aside.
4. Beat egg whites with cream of tartar until stiff, add the sugar slowly.
5. Fold the beaten batter into the egg whites. And pour into the caramelized
pan.
6. Put the batter over the steamed pan. Cook for 35 mins. or until nothing
sticks in the toothpick .

In my opinion, I think its not good to to have a one world order, because you know we cant control our own country anymore, thats scary because anything can happen to us. My christmas tree
Here in my country Philippines, its too late to decorate a christmas tree when you start decorating it in the middle of November. Me I just finished setting up and decorating my christmas tree yesterday. Well.. its never too late! I'm glad I set up my christmas tree because I really feel the spirit of christmas now... and Im glad my boarders liked it. Now they are excited to talk about our christmas party on Dec. hehe.... Special Students
When you look at the picture here, who could say that they are different? Well they are not different than the other people but in fact they are special people, they are the the Hearing Impaired students (meaning they are deaf and mute students) . They are my college students in a Systems Technology Institute College of Davao City. I'm teaching them the basic computers and other subjects as well. I really enjoy watching them and or joining them in their conversations through their sign language, they have fun with each other. You know its nice to watch them because they are more close and very friendly with each other. Specially when you get to know them. they are more friendly than the normal people.
I learned the sign language because I have a sister who is a Hearing Impaired too. In this second picture is my sister Felicel, who is a teacher now in a Special Education school in Davao city. She is a graduate of Bachelor of Science in Secondary Education In Laguna.She's more beautiful and petite and taller than me tsk tsk.. hehe... Before when she was small my other sister dina and I used to teach her some sign language that we learned, but now she is my teacher now specially in sign language that I didn't learned before. She helps me a lot with my job now as a teacher. My family and I are so happy because she is stable now. She has a job and can stand with her own feet now, though sometimes she still asks money to my parents but she's ok now.
You know I hate it when there are normal people would laugh at them or treat then not nice and specially when they make fun at them. Well... they are the one's not not normal than the special people like the hearing impaired people.
If you happened to see one of the hearing impaired people, try to befriend with them, they are more than happy to give back your kindness to them, and definitely you will enjoy their company.

3 Weeks with my Tiger
My tiger visited me last Sept. 20 until Oct. 9, he stayed here for 3 weeks. I cant express how happy I am for the last 3 weeks passed that he was here. But double the pain I felt now that he's back in Canada. I hate this long distance relationship but what can I do? I happened to love a man from a thousand miles from here. Even my tiger suffered too. Oh well, this is our choice so we have to bear it and have patience for the right time to be with each other for a long time.
In his second visit,we experienced lots of revelations with ourselves, our likes and dislikes with each other...but definitely we had fun.I'm so glad we experienced it because through that our relationship became stronger.
Hopefully soon, if God permits and if the Canadian Embassy will allow me, I can visit him.

As America Collapses US Government Secret Plans Revealed
As I read this site, its really scary.... So how true is this? is it true that there are secret elite group that are responsible behind all the secret plans for the world? And this elite group trying to form a new world order, meaning a one form of government for the world, thats why they are trying to shake the world now by holding back the funds for the world, thats why we are in crisis right now. and responsible for the micro chips that they gonna implant that to everyone for identification purposes and as you know other puproses too. I"ve heard and read a lot about the secret elite group that holds all the wealth in the world like the federal reserve. As you know this bank is not owned by the US or other country but this is an independent private company that are responsible for all the currency in the world. But they own almost all countries specially the US and in Europe. Have you heard about the AMERO? ah well if you have time reading this site you will know what I'm saying about, and I'm sure you heard about that already.
Well this is just my own point of view, Try to read this whether if its true or not. Well at least we are informed about what will gonna happen or something......

Cebu
Last Weekend my sister and I flew to Cebu City, Visayas, Philippines, for her CFO Seminar. Actually I've been in Cebu before but I never really had the chance to explore the City. And my last visit there, I got to tour around a little in Cebu together with my sister and our new friend Jing, we met in CFO seminar. We had the opportunity to visit their church Sto. Rosario and the historical Magellan's Cross.
I was so amazed with their church because its so nice even though its so old already...
specially inside the church, the altar is big and large, as in the the front wall is displayed with lots of big statues of patron saints . I really like it. But you know its so funny (well for me of course hehe...) because I noticed that people there, everytime they pass in front of the church, they wave their hands as they look at the altar inside. As if whether they were waving goodbye or something hehe... Well it shows that they are very religious people. No doubt about that.
And we visited their malls as usual hehe.... Cebu is a nice and very progressive city, lots of business establishments and malls than here in my town Davao City. But scary to go out specially at night because as the people there always tells us that its not safe to stroll around in their city because lots of smugglers and snatchers roaming around. Such a beautiful city but ruined by these people. and its more expensive than Davao City. But i like their taxi drivers, their services are very nice, they dont take advantage to tourist's people. I'm so glad I got to see Cebu. Hopefully someday I can visit cebu again.

All about Shoes
My 2 sisters and I have the same sizes so we exchange shoes with each other sometimes. Our sizes ranges from 5 to 5 1/2. My mother shoe size is six, same with my father and my 2 brothers have the same shoe size too, ranges from 7 to 7 1/2.

Time for a change
My twin sister Dina and I always together since we were kids until now, we share almost a lot and everything and always going out together shopping or mall hopping, experimenting new things etc.... In short we are not just sisters but bestfriends... well of course we don't share all specially our love life's hehehe... Last 2004 She's married to a Canadian guy my brat bro-in law ... But even that we are still together, but last friday, they finally got the documents that they have been waiting for the last 3 years, the visa from the Canadian Embassy.... she's granted to go to Canada, and anytime soon she will leave us huhuhu, and have a new life there together with her hubby. At last the moment that they've been praying and waiting for is finally come true. Now I realized that we will never be the same as before, she will start her new life there and mine as well.... although I still have the chance to be together hopefully soon in Canada because my Tiger and her hubby are best of friends and they are just neighbors but its not the same as like before, like we share bed when we sleep or eat together, even taking a bath together hehe....And even taking control of my life sometimes hehe... Well I admit between the two of us she's more of the ate to me hehehehehe........ in short she's the bossy and matured type than I am. I will surely miss my sister but well... life must go on... It's time for me to change, to be mature. But I'm so glad that she's happy now, finally she will be with her husband soon. And I'm so glad that she found a very kind heart, brat but funny guy, my one and only brat bro-in law Terry. We are happy for both of you.. congratulations!!! finally.. you will be together as a family soon... I love you both and hopefully i will have cute nieces and nephews very very soon.....

Macaroons
My other favorite sweet food.... macaroons. A stuffed dessicated coconut with condensed milk and butter with raisin on top. I wanna share this recipe. I'm hope you will love this too. So here it is:
Ingts:
1/2 c. - margarine or butter
1/4 c. - sugar (white)
2 pcs. - egg
1 can (350g.) - sweetened condensed milk
1/2 tsp. - vanilla
1/2 c. - all purpose flour
1/2 tsp. - baking powder
200 g. - dessicated coconut
Directions:
1. Preheat oven to 350 F. Prepare macaroons tin cups by lining with colored fluted paper cups. Set Aside.
2. In a bowl, cream margarine ans sugar until light and fluffy. Add egg, mix well. Blend in flour, baking powder, dessicated coconut, condensed milk and vanilla. Blend well.
3. Spoon mixture to prepared macaroon cups, garnish with raisin on top and bake in preheated oven for about 15-20 minutes or until golden brown

A birthday present for a special girl
This is what my sister and I've been doing this weekend, a present for our dear cousin Grace for her 17th birthday from her beloved ate Gina. Ang sweet naman ni ate..... She gave her little sis a surprise gift yesterday. I'm so glad the birthday celebrant liked it.... she was really surprised as she really didn't know anything about it (thats why its a surprise duh! hehe...). Well she deserves it because she is a fine and kind, loving, caring, sweet and beautiful daughter and sister to the family. And she is a special sister to her ate, my cousin Gina. Happy Birthday dear Cuz! Hope you have a many many more birthdays to come and good health always and your family.

My Jellyroll and Sambre (Double body)
My recipe for this week. Durian Jellyroll and Double Body. These recipe's takes time to cook and a little complicated but its fun and very rewarding when its done (for me hehe....). I wanna share these recipe's to you, so here it is:
Jellyroll
Dry Ingts:
250 grams cake flour
4.5 grams baking powder
4.5 grams salt
27 grams powdered milk
Liquid Ingts:
6 pcs. eggyolks
190 grams warm water (or sprite)
2.5 grams vanilla
Meringue:
6 pcs. egg whites
1/4 tsp. cream of tartar
355 grams white sugar
Durian jelly or any kind of jelly or preserves.
Preparation:
1.HEAT oven to 350°F. prepare 15x10x1 inch jelly roll pan with glacine paper and rub the sides of the pan with little amount of oil.
2. BEAT egg whites with cream of tartar on high speed for 4-5 minutes or until stiff peaks form. add white sugar gradually. set aside.
3.In another bowl,beat eaggyolks for 3 minutes or until slightly thick and light lemon colored. Add sugar gradually and vanilla to egg yolks; continue to beat for 1 minute. Sift together the dry ingredients. Add to egg yolk mixture. Fold in beaten egg white. Pour into prepared pan spreading batter evenly.
4. BAKE for 15 minutes or until golden brown. Sprinkle powdered sugar onto a clean kitchen towel. Loosen cake edges from pan. Immediately invert onto towel. Gently roll cake with the towel into a log, starting at the long end. Cool completely, about 45 minutes.
4. Stir preserves or jelly slightly in order to spread smoothly on cake. Unroll the cake. Carefully spread with preserves/jelly. Reroll cake without towel. Wrap in plastic wrap or in jelly roll stiro foam.
Double Body (Sambre)
Ingts:
250 grams third class flour
35 grams margarine
100 grams lard or shortening
10 g. baking powder
2 pcs. egg
250 g. sugar
5 g. salt
1 tsp. vanilla
Coating:
Dessicated coconut
syrup: 4 cups water: 1 cup sugar
Directions:
1.Heat oven in a 350F.
2. combine flour, baking powder and salt. mix well. set aside.
3. cream butter and lard or vegetable shortening until light and fluffy , add sugar and egg and vanilla alternately and gradually, add flour and mix with your hands. Dough is ready when it sticks together. put a enough amount of dough into a decorating cellophane hold and squiz and shape it like a cone in a pan, do the same amount and size until all the dough are shaped and in line in a pan.
4. cook for 10 to 12 minutes or until light brown but dont overcook or it will be hard like a cookie.
5. Take out from the oven. Dip in the syrup and pair it. roll in the dessicated coconut.

Homemade Puto Cheese
Just wanna share this recipe to you guys, i'm sure you will love it, the texture is soft and tastier....here's how to do it:
Ingredients:
3 cups cake flour
1 cup white sugar (divide sugar, 1/2 c. for dry ings., 1/2 c. for egg whites)
1 1/2 cups water (instead of water i use sprite cola or lime cola, to make it tastier)
6-8 eggs
1/2 tsp. salt
2 tbsps. milk evaporated
1 1/2 tsps. baking powder
1/4 tsp. Cream of tartar
cheese (grated)
Procedure:
1. Separate eggyolks from white.
2. Beat thoroughly egg whites with 1/4 tsp. cream of tartar, add slowly 1/2 sugar. set aside.
3. Mix all dry ingredients, blend well
4. Add liquid ingredients, mix
5. Pour-in the beaten egg whites, mix well, dont beat just cut and fold
6. Pour into muffin cups laden with cut cellopahane or pre-cut puto cheese paper greased with a little oil or butter, half full
spread cheese
7. Steam for 15-20 minutes.

Friendship…What does it mean?
I once read a winning definition of friendship, it says:
"A friend is the one who comes in when the whole world has gone out."
Friendship for me is the inexpressible feeling of comfort to the person who are there to laughed and cries with you, no matter what. For me, a friend is the person that will tells me whenever I do wrong and lead me and be with me whenever I am down….in return, I will be a good friend that will fight for her/him till the end. Me, I don’t mind if she’s good or not, as long as I am your friend, I will fight for you, I am a type of person that you can trust and share secrets with…as much as possible I will be your mirror, I will tell you if you are wrong and compliment you if you did something good…..hmmm sounds perfect huh?
Life is full of surprises, just in an instant, for some reason, my friendship has been tested to the person I used to know as my “best friend”. For me, there are certain rules in life, honesty, respect and most of all don’t judge others…if one is lost, then everything will be damaged….doubts, angers will arise…..
I don’t wanna fight back because I don’t want to pressure and add more wound in our friendship…they said silence and time will heal everything…within me, I still wanted to patch up things, our friendship been through trials and survived before…..i don’t know now……it so happened that our partners in life (her bf and my bf and my sister’s husband) had misunderstandings with each other, its supposed to be not our fights…..ah well, its her right to believe whatever she thinks is right…..if she thinks judging others is good, then count me out, I don’t like that…..talking just for once is not enough to know a person well, and then judging them (my bf and my sister’s hubby) based on a joke conversation? hmmmm…wow! Amazing!....its just so unfair…really unfair! for just a lame misunderstandings, our friendship is lost, might be or might not be fix again....
To think that she and my bf and my sister’s husband been friends for 3 years, still she never known them yet…..they have treated her as a good friend and treated her as extended family….hmmmm…what a shame!
I just hope you know how to lower your pride once in awhile……Me? Oh I did, I always did since before……..i hope you and your chosen partner will be happy.

Me and my big Tiger
Talking about my favorite topic, hmmm I guess one whole page is not enough…I can talk all day long hehehhe…as you know, when you are in love, you love to talk about him or her….i guess you wont be out of words describing how to terrific he is……so I guess I will have to forget the appearance as it will take whole day describing him, but one thing I can say….he is gorgeous hehehe…
Hmmmm..where did we start? It started when my twin sis married a Canadian, he and my brother-in-law are best of friends, my brother-in-law always told me during the first year of marriage with my twin sister that he wished I can find a good guy as I am a good person, and that if he can only wish, me and his best friend would end up together as he is a good guy..at that time, dario (my big tiger) was about to get away with a complicated life from his past relationship and me on the other hand, still involve with a complicated guy…., Dario and my twin sis chat once in awhile before as they are friends too of course, me and him just say hello once in awhile too, never serious or never think we will be boyfriend and girlfriend….2 years past, Dario was just got out from his relationship and for me, about to start a new life and trying to forget the bad relationship that I had…..Terry my brother-in-law, when he knew that we were free at that time, he then act as our cupid pulling his arrows in each other’s heart….hmmmm…in other words, bro set us up. He knows that Dario and I love to play game, so what he did? He lead me and Dario to play a domino game on the internet… smart huh? Hehe….and so for quite awhile we’ve been a constant opponent of a certain game as we love to beat each other hehehe….
From that on, we became chat mate and really good friends. So he decided to come here with bro last April 2007. I still remember the first time I saw him at the airport he was so gwapo even if he looks exhausted and weak from the 13 hours travel. It was so unlucky he has colds that time when he came here. He stayed here for 3 weeks. We get along so fast on the first day we talked, we just cant get away with each other, I remember that time that we love to talk each other all night long hehe… and so we knew from that moment that we like each other. Last April 14 was our first anniversary. So far we are going stronger and love each other more deeply.
Long distance relationship is not easy, but if you two have faith, love and respect each other, everything will be going smoothly. For me and my tiger, our love with each other became stronger because of the foundations that we have and constant communications with each other. I wanna thank my bro in law and my sis for leading me to the real man who loves me for who and what I am. To my tiger (Dario)) I want to thank you for loving me and accepting me for who I am. I will always support and trust you. And I will love you with all my heart. I hope we will last for a long time.

My Baby girl!
My new baby girl, her name is raven….she’s so tiny, cute and cuddly..her hair is black and shiny…..we adopted her when she was 1 month old and now she just turned a month older last april 11…..with her, being a part of my life now, It changed me, totally in terms of being a responsible mommy, or I can say a responsible owner…..for just a month, wow! my life changed so fast, in an instant I can say hehehe… being her mommy, I know how responsibility is….how to discipline and to control my feelings whenever I tried to give her a lesson…..when you love someone so dearly, you don’t mind all the sleepless nights as she wants you to hug her all the time, you don’t mind wiping the floors because she’s urinating everywhere and especially cleaning all the poops when you wake up in the morning that is almost all the corners of the house…you don’t mind the smell of the house anymore hehehe…...and not just that, should be financially ready for her vaccines and vitamins and for her yummy dog food hmmmm……oh, not just that, the hard work of toilet training too….and I’m proud to say, she’s learning now…..but through it all, I love her more deeply and I’m proud to say that I will be a responsible pet owner, I will be a good mommy to raven……I just love her so much! For you raven, cheers!! A new journey of our life together!

Beach Resort getaways….
Summer is here, it’s the perfect time to have some fun under the sun! Feel the breeze of the ocean and enjoying the clear water under the sun or maybe under the moonlight…..hmmmm…sounds so perfect for me……
Me and my family loves the ocean, every time our family are together, we just go out bring some lunched packed and wander through the nicest and cleanest beach in town….
Just a year ago, my sister and my brother-in-law bought a 2 hectare beach property in Sta. Maria, according to the people there, we owned a perfect area to go swimming because when its low tide, you can still go swimming, the water is never really low and no sea urchins or corals that will hurt your feet…..oh but it doesn’t mean no corals there, in fact Sta. Maria beach is known to have abundant corals and different kinds of fish…..
Never imagine in my entire life we have our own beach resort now, my sister and my brother-in-law built a nice rest house there, it’s a gift for the family especially to mama and papa…. The place is under renovation now, mama and papa put up cottages and conference room, soon it will be open to the public and the name of the resort will be Green valley Resort….

My lovely Raven
This is my pretty little Raven, the only baby in the family hehe... she turns 5 months today. sometimes we call her "dugyot"(filthy) Raven hehe...As you can see in the picture as if she never taken a bath but she took a bath in that picture already hehe...Now I have to take more time to groom her because her hair is very thick already and its hard to groom her because she is very very active now,But she is super duper sweet, every morning she is our alarm clock, she climbs in our bed and lick you and or sometimes pull your hair until you're awake hehe.... though its really annoying but its cute and so sweet of her. Especially when she plays with you, all your worries and problems will be erased. She's really cute now and so adorable. Though I still had a hard time with her toilet trainings and learning how to behave, and barking so loud inside the house but its fun when she's around. Im glad she 's learning and more matured now.
I love this dog so much that i think she is my real baby hehe..Everybody loves her. I cannot imagine if she's gone and or something happen to her, it will really break my heart.

Pacman did it Again!!
Pacquiao brutalized a courageous David Diaz to win the World Boxing Council lightweight title with a spectacular ninth round knockout in Las Vegas on Sunday (Saturday Eastern time), he fulfilled his quest for world titles in four separate weight divisions and emerged not only as an extraordinary Filipino but an Asian phenomenon as well. My recent Travel
Hi guys!
Vacation is here once again, time to relax and explore different places, getaway from the hustle and bustle of life once in awhile ….I’ve been in manila and
Vigan for almost 2 weeks, thanks to my brother-in-law. He was the one supported me going to Vigan. Actually, it was me and my twin sis went there, we attended
Felicel’s graduation. FYI, Felicel is our younger sister, she graduated Elementary Education at DEAF School in Paowin, Cavinte Laguna last April 2….She’s a deaf and mute actually, but when you look at her, she’s normal… she’s pretty, tall and petite, others said that she’s like a model, hmmmm prettier and way taller than me I admit hehehe….
Back to my getaways story, my twin sis just received a text message from papa while we are in laguna, he told her that their application (her and her husband Terry) for spousal visa in Canada has been received and that the embassy needs her passport as soon as possible, hmmm I guess that means their application will be granted soon, hmmmmm…..i’m happy for them….and so, when my brother-in-law knew about the news, he sent financial support right away going to Vigan, Yey!!!! Thanks bro.! never been in Vigan actually, he really wanted me to go there as he told my sis that I wont be able to go there sooner, well, maybe in future…..he want us to spend time with each other before she go to Canada, I know she wont be able to visit us here for 2 to 3 years…..
It took 10 hours going to vigan, but when I got there, its worth it, though the weather is super hot, oh I forgot, its still part of the Philippines, so what should I expect hehehe….Vigan is one of the world heritage as mostly the old buildings built by the Spaniards way back in 18th century was preserved there...you can see old churches and old buildings and museums where memorabilia’s was preserved during the Spanish era here in the Philippines. There’s still a kalesa as one of the transportation service there, you can hire it for 150 an hour to tour the entire historical places in town. 4 to 5 hours is enough to visit all the places. But for us, we manage to deal with the kartero (the kalesa driver…hmmmm, I hope I’m right) we only paid 4 hundred for almost 5 hours. Thanks Manong! This city is the baluarte of Chavit Singson too (a controversial politician), his place is the sanctuary of rare animals that mostly imported from abroad, I saw tigers and a lion, I saw big snakes and a dwarf horses! Its as size of a deer actually, imagine that! Oh and a sanctuary of butterflies too and many other animals such as ostrich, eagles, monkey, iguanas, and many more….oh and his big mansion built uphill at the center of the sanctuary.….its worth traveling for long hours, it’s a rare place where you can see and still feel the relics of the past. You wont see it usually in other places, only in vigan….i suggest, if you want to go to vigan or baguio, take the night trip, you wont be able to feel dizzy due to a hundred stops just to pick up passengers along the way and the worst traffic, no pollution and the best part, when you wake up in the morning, Wah la! You are there already. Well, that if you want to travel by bus. Partas bus located in pasay and cubao which are open 24 hours from manila to vigan but going back or from vigan, its just until 11 pm. When you are there, lots of nice and neat hotels, some expensive but there are affordable too, clean and neat..but if you want to stay in a century old house at the same time a museum, stay at Villa Angela, almost all the things there are the living proof of Spanish era muebles.
